Back in mid April, my department at work hosted our friend and co-worker an office baby shower! The shower was Norwegian themed to honor the Momma’s heritage and I baked orange cardamom cupcakes for the occasion. The Real Simple recipe I used called for a chocolate sour cream frosting, but in the end I felt like the chocolate was too much and overpowered the cupcake flavor. I ended up just making a simple cream cheese frosting and I think the combination was successful. Yum!

Spring Strawberry Cake
My weekend baking project was this strawberry layer cake (previously made back in June 2012), and is one of my favorite cakes to this day. This time, I had a chance to snap a few photos before taking it to the cake tasting event in my neighborhood.

My friends hired me to bake cupcakes for their company birthday party! I had fun with these vintage malt milkshake-inspired cupcakes; they were my first filled cupcakes, and I got to try out my cupcake corer! 🙂 Still working on the piping techniques!

CUPCAKE FLAVOR 1:
Vanilla cupcakes with real strawberry filling and cream cheese frosting. Garnished with a strawberry and red and white paper straw. {I’m hearing Contestant voices on Cupcake Wars presenting their cupcake flavors to the judges….haha!}

And I am a big fan of your Pastel Swirl Technique Video Tutorial! I still have a lot of practice ahead of me; Mine don’t turn out nearly as beautiful and perfect as yours, but celebrations make the perfect excuse to practice.

‘Free’ 4th of July treats
I attempted to make a gluten-free, egg-free and cane sugar-free treat to take to my 4th of July family gathering!
I can’t remember exactly what recipe I used now, but I did alter a banana cake recipe, using rice flour, omitting the eggs and any dairy products, and used coconut oil and coconut sugars.
